Since I am playing catch up on not sharing in a while...bear with me!
If I'm being honest, I strongly dislike doing dishes. So any recipe that lets me use fewer dishes and get dinner on the table fairly quickly makes me happy.
With this lovely weather, I really wanted beef stew last night (it's the ultimate comfort food for me), but I didn't have the ingredients for that, so Plan B was one pot spaghetti!
I know that I've probably said it a million times, but I always keep several packs of ground beef thawed in the fridge, because it is so versatile and quick!
This meal is literally prepared in one pot, which I love. Simply brown a pound of ground beef in a pot with minced garlic and diced onions (or if you're like me and don't have any on hand, garlic and onion powder). Once browned, add 14 oz of beef or vegetable stock, 1 can of tomato sauce (I use the one that already has some herbs in it), 1 can of tomato paste, and about a cup and a half of water. Bring to a simmer, then add spaghetti noodles (we use whole wheat), and cook about 15 minutes until noodles are al dente and sauce is thickened.
We serve it up in bowls sprinkled with parmesan cheese, and it's always a hit!
We have plenty of ground beef in stock, come grab some to keep on hand for nights where you need something quick and easy!
